Thank you for all of the love on yesterday’s post! I’ve had some requests to post sample menus and some of the easier recipes that I make. My menus aren’t that formalized… I usually take a piece of paper and just list the weekday and date (i.e., Monday (23)) and then list the meal underneath it. However, I know some people track in Excel. My friend Alysia at Slim Sanity has an awesome example on her blog.
As for “easy” meals, I consider these meals that only take 20-30 minutes or only require me to put something in the oven and check on periodically. Roasted potatoes with sausage and vegetables is one of my favorite quick meals (and actually what I’m making tonight!). Sometimes I’ll throw a pork chop (boneless) in the oven with some BBQ sauce and fries on the side and make BBQ pork sandwiches. Another favorite of mine is making steak tacos, something similar to this only with corn tortillas rather than flour. We even have chicken nuggets and fries sometimes, which is really easy (and Applegate makes a gluten-free variety that is really good!).
I actually woke up this morning not feeling tired. How is that possible?! I never sleep well on Sunday nights, but I think last night was one of the better nights. I woke up around 5:45 expecting it to be way later, and was excited to feel well-rested for once. I think getting back on track with my vitamins is helping a lot!
Five miles around the park (seriously, one of these days I’m bringing my camera to take pictures for you guys!) followed up with seven minutes of abs. My abs are sore from my workout on Saturday so I’m pretty sure they’ll be sore after this one:
7 minutes of abs
(each exercise for 1 minute, followed by 10 seconds rest)
- Burpees
- Flutter kicks (these are killer)
- Side plank
- Plank
- Side plank (other side)
- V-ups
- Supermans
For some reason, my ability to do planks has significantly decreased. I think from taking time off while I was on vacation. I desperately need to get this back in motion and back up to par. Goal for the remainder of the month!

My favorite easy meals are soups and chilis. I like being able to cut a bunch of stuff up and then leave them in a pot for a while.
There are some great bodyrock ab workouts, but I have been slacking on my ab workouts recently as well!

Summertime easy meals are salads–taking advantage of farmers market veggies, fresh herbs, grilled protein. Year-round go-tos are veggie egg scrambles, sanwiches, soup/chili, pita pizzas with a side salad.
Best abs workout has to be the Exhale Core Fusion abs. Owwwwww
Those just sound intense… I have to check them out!! Great recipe ideas, pita pizzas are something my fiance would love!

Hhaah I know what you mean! Even though I struggle at them, I love how strong they make me feel.
Dang, you must have some abs of steel! The ab work I do in my yoga classes always seems way tougher than anything I do by myself, but maybe that's because we usually do abs at the end of class. I live by myself and don't care so much about having fancy meals, so my "easy meals" are super boring–generally throwing together a salad, cooking up some eggs with veggies, or microwaving some frozen veggies and a veggie burger.
OMG, I wish!! Hahah trying to get up to that… those sound like good meals!! I would live on salads if I lived by myself I think
Oh man, holding planks for a long time is rough. That's a hard ab workout for me. I need to get down on more vitamins.
