Preparing good and healthy food can sometimes take a great toll on our schedule. This is most especially true if you are a busy person who has to juggle work, house chores work out and of course, your social life. Regardless of how busy you are, it is never a good idea to sacrifice your health. Remember that health is wealth. No matter how cliché that may sound, it’s true and we should always keep that in mind. Having said that, here are some healthy recipes that are fast and easy to make:

 

Chicken, Cucumber and Carrot Salad

What you will need:

  • 2 cups of chicken breast, cooked and chopped
  • 1 1/4 cup of seeded cucumber
  • 1/2 cup of carrots, chopped
  • 1/2 cup of radishes, sliced
  • 1/3 cup of green onions, chopped
  • 1/4 cup of light mayonnaise
  • 2 tbsp of fresh cilantro, chopped
  • 1 tsp of minced garlic
  • 1/4 tsp of salt
  • 1/4 tsp of cumin, grounded
  • 1/8 tsp of black pepper
  • 4 pcs of green lettuce leaves
  • 4 whole wheat pitas, cut into 8 wedges each

What you should do:

  • The first 5 ingredients should be placed in a big bowl and mixed. Add the mayo and the next five ingredients in other small bowl. Stir with the ingredients together with a whisk.
  • Combine the mayo mixture and the chicken mixture. Stir well until the mixtures are thoroughly blended.
  • Place on lettuce leaves and serve with pita wedges.

 

Sweet Orange Salmon Fish

{note: when buying salmon, make sure its fresh-fished and not farm raised}

What you will need:

  • 2 tbsp of brown sugar 1 tsp of chili powder
  • 1/2 tsp of grated orange rind
  • 1/2 tsp of ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp of ground coriander
  • 1/8 tsp of black pepper
  • 4 salmon fillets cooking spray

What you should do:

  • Preheat your broiler. Place the brown sugar, Chili powder, grated orange rind, ground cumin, paprika, salt, coriander and black pepper in a bowl and mix. Rub the resulting mixture on both sides of your salmon fillet.
  • Coat your broiler pan with cooking spray. Place salmon on top. Broil it for about 8 minutes.
  • After that, the salmon should flake easily. You can test it with the use of a fork.
