If you need a quick and easy (and cheap!) snack, have I got the snack for you.
I first fell in love with chickpeas when I was in NYC and would make homemade hummus all the time. I still love hummus, but it takes some time to prep and you always need to have a good dipper to go with it.
I didn’t start experimenting with what else you can do with chickpeas until we moved to TX and since then, I’ve fallen in love with these delicious treats.
Super easy to make and delicious to snack on… especially if you are on the go and don’t have time to deal with dips, keeping foods cold and all that jazz.
So, here you have it — my recipe for lime chili chickpeas.
Lime Chili Chickpeas
- A can of Goya Chickpeas
- 2 tbsp. lime juice
- Chili powder to taste
1. Preheat oven to 425*.
2. Open, drain and rinse your chickpeas and put into a bowl. Pour the lime juice on the top and shake a good amount of chili powder (note: if you like spicy food, put a LOT — I usually put a middle amount)
3. Mix well and pour on greased cookie sheet (I prefer using aluminum foil) and cook in the oven for 15 minutes, or until browned. At around 7 minutes, I usually take a spoon to move them around so they don’t get overly cooked on one side.
4. Store in an airtight container and enjoy!
