Today marks another edition of Running Coaches’ Corner. If you aren’t familiar, this is a weekly link up between Debbie, Suzy, Rachel and I where we share the latest and greatest about running to help you hit your goals. This month, we’re focused on talking about nutrition and the best eats for runners.
To wrap up the month, I wanted to share the best resources for healthy recipes. I love using the web to find new recipes to try out and well, you can never have enough recipes in your arsenal. So here you go… 🙂
1. Skinny Taste
I think Skinny Taste was one of the first blogs that I started reading for recipes. I am a huge fan of the majority of recipes and love how easy they are to make. Plus, she has a directory that includes a recipe for everything — any holiday, any course.
I’ve followed Lindsay for a number of years and she has always posted a good variety of recipes. You can always find something that you love on her site — and its so easy to search the index of recipes that she already has posted.
OK, so I live in Texas so I can’t really say I’m a homesick Texan. But, the recipes in here are SO good. Some of them are definitely not that healthy, but with a few modifications, it’s easy to make them a little bet better for you.
Sam and I had the chance to meet a few months ago and she is one of my favorite people! I love how inspiring her blog is, but I also love the recipes that she shares.
The FitFluential blog includes some round-up posts of the best recipes that you can find on the web. Most recently? Colorful salad recipes for summer. YUM!
Anne is a fellow Run Happy Ambassador and I LOVE the recipes that she shares! They all sound so amazing and are generally pretty quick and easy to whip up and put on the table.
I am not sure why they don’t talk about this 30-day menu more often in OTF workouts, but there are some recipes in here that I absolutely love! The pecan-crusted chicken and the buffalo patty with mushrooms and onions top my list.
8. Slim Sanity
Alysia and I go back, way back, before we even had blogs! We used to waitress together back in Wisconsin. She share the most delicious recipes! Plus her Instagram has some of the most to-die for recipe images.
9. Run Fast Eat Slow by Shalane Flanagan
This book isn’t officially available until September 6, but the hype has made me SO excited for this. I’ve seen a few early recipes from the book and they all sound amazing.
This cookbook has been in my kitchen since it was released and I am officially obsessed. There are SO many amazing recipes in here. I think my favorite may be Nick Symmonds’ red rice and beans.
